Ingredients

12 ounces gnocchi

8 ounces cremini mushrooms, sliced

2 cloves garlic, minced

¼ cup chicken or vegetable broth

½ cup heavy cream

4 ounces shredded mozzarella

2 tablespoons butter

Fresh thyme leaves

Salt and pepper to taste

Directions
Step 1
Melt butter in a large skillet over medium heat.
Step 2
Add sliced mushrooms and cook until softened and browned.
Step 3
Add garlic and thyme and cook for another minute.
Step 4
Add gnocchi and cook for about 6 minutes, or until golden brown and slightly crispy.
Step 5
Add vegetable broth and reduce.
Step 6
Stir in heavy cream and cook until it starts to thicken slightly.
Step 7
Reduce heat to low.
Step 8
Add mozzarella cheese and stir until melted and creamy.
Step 9
Season with salt and pepper to taste.

Garnish with fresh parm.
